KITCHEREE (Rice with Lentils)


This dish is considered as a healing and superfood. It’s rich in protein and easy to prepare. I make it once a week. You may use other lentils like split mung beans. Serve it with fresh green salad and chutney if desired.

INGREDIENTS:

1/4 cup cooking oil

1 teaspoon cumin seeds

2 medium onions, chopped

1 tablespoon salt

1 teaspoon turmeric powder

1 tablespoon chili powder

1 chicken cube

7 cups water

1 tablespoon vinegar

1 cup yellow lentils, washed

3 cups rice, washed

 

DIRECTIONS:

  1. Saute’ onions & cumin seeds in hot oil until golden brown.
  2. Season with salt, turmeric, chili powder, & chicken cube.
  3. Add water and bring to boil.
  4. Pour vinegar.
  5. Stir in lentils & rice.
  6. Cover & simmer in low heat for 30 minutes.
