LIPARDO’S HOMEMADE SHAWARMA

After marriage, I spent 8 years in the Middle East. Traveling and living in a foreign land is a great experience. I’ve learned to love not only the culture but the Arabian cuisines. Chicken Shawarma is one of my favorite “street foods”. Its stall can be found along the foothpath. Here’s my version of this recipe…

INGREDIENTS:
1/2 kg. chicken breast, julienne
1 tsp. Maggi seasoning
1 tsp. Worcestershire sauce
1/4 tsp. MSG
1/4 tsp. black pepper
1 egg, beaten
1/2 c. all-purpose flour
oil for frying
1/2 c. mayonnaise
1/2 tsp. garlic paste
french fries
pickles
Arabic bread

DIRECTIONS:
1. Marinate chicken with Maggi seasoning, Worcestershire sauce, MSG and black pepper. Refrigerate and stand for 1 hour.
2. Dip chicken in beaten egg and coat with flour.
3. Fry in hot oil until light brown. Set aside.
4. Mix mayonnaise and garlic paste. Set aside.
5. Spread garlic mayonnaise on Arabic bread.
6. Fill with chicken, french fries and pickles.
7. Roll bread like a spring roll.
8. Serve hot with ketchup.

ARABIC BREAD

INGREDIENTS:
1/2 c. warm water
2 tsp. yeast
1/2 tsp. salt
1 tbsp. oil
2 c. all-purpose flour

DIRECTIONS:
1. Combine warm water and yeast until dissolved. Don’t use hot water. Warm water wakes up the yeast.
2. Add salt and oil into the yeast mixture.
3. Mix flour into the mixture. Knead for a few minutes.
4. Place in a greased bowl. Cover and stand for 1 hour until double in size.
5. Preheat oven to 400 F.
6. Divide dough into four. Form each dough into a ball.
7. Flatten each ball by a rolling pin on a dusted board.
8. Place on a greased baking sheet and bake for 10 minutes.

QUICK FLAT BREAD

INGREDIENTS:

2 c. all-purpose flour

1/2 c. water

pinch salt

DIRECTIONS:

1.  Mix all the ingredients in a bowl. Knead for a few minutes.

2.  Divide dough into four. Form each dough into a ball.

3.  Flatten each ball by a rolling pin on a dusted board.

4.  Preheat griddle on stove. Place the circular dough on it. Cook on medium het until red spots appear on the bread. Turn it over.

NOTE:  Arabic bread may be cooked on a preheated griddle on stove. Cover with a large pan by inverting it.

VARIATIONS:  Beef steak may be used in place of chicken. Green salad like cucumber, tomato and cabbage may be added in this recipe. Serve with hot sauce instead of ketchup.
