CARROT DESSERT

This is one of the best Indian sweet dishes I couldn’t forget in my life. It’s incredibly tasty and exotic. I didn’t stop searching how to make it until I came up with this recipe…

INGREDIENTS:

1/4 c. corn oil

1 kg. carrots, peeled and grated

1 c. evaporated milk

6 tbsp. powdered milk

1 tsp. vanilla essence

3/4 c. sugar

5 tbsp. butter

1 tbsp. raisins

1 tbsp. chopped cashew nuts

DIRECTIONS:

1.  Saute’ grated carrots in hot oil for 5 minutes.

2.  Add milk and vanilla. Simmer until milk absorbed into the carrots. Stir occasionally.

3.  Add sugar, butter and raisins, continue stirring until liquid absorbed.

4.  Garnish with cashew nuts.
