Among the Middle Eastern cuisines, I love Egyptian dishes. The way of cooking and taste are very much similar to Filipino cookery. I tasted and learned how to prepare this main course “Firakh Bil Hummus”  from our Egyptian neighbor in Riyadh. It’s so delicate and tasty…


3 tbsp. oil

1/2 kg. chicken, cut up 

5 green cardamoms

1 medium onion, chopped

1 medium tomato, sliced

1 chicken cube

1 tsp. salt

1/4 tsp. MSG

1/4 tsp. black pepper

1 tbsp. tomato paste

1 c. water

1 c. boiled garbanzos (canned)


1.  Combine the ingredients in a pan except garbanzos. Simmer for 30 minutes or until chicken is tender.

2.  Add garbanzos, continue simmering for 5 minutes.

NOTE:  Dried chickpeas can be used by soaking it in water at least 5 hours or overnight. Rinse it many times and boil for 1 hour or until tender. Pressure cooker or a pinch of soda makes garbanzos tender fast.
